Threw these together with a few modifications: used an entire small banana instead of half a normal one, had no vanilla so used peppermint essence.

Yes, you may need lots more milk than the recipe mentions else you wind up with stiff glug that turns into muffins instead of pancakes. I assembled mine (as usual) in the ThermoMix so had a graphic demo of how much fluidity was required, & just sloshed some in until is flowed about right.

They tasted delicious, and finished off a cobbled-together menu very well.

where are you from that milk is so expensive. here in the usa it's about 3 dollars


Here in Tasmania, AUD$3 will get you at least 2, probably 3 litres at any good supermarket. From a country-store type deli, that's about AUD$5 (www.xe.com/ucc says USD$2.45 and USD$4.09 respectively, AUD's doing fairly well right now).


well, how about paying ~2.5$ for 0.5 litre of Alpro here in Latvia?  Undecided

When it's available, we can get stuff like almond milk for better prices than that (assuming USD$; in fact, usually assuming AUD$).

I guess Latvia has a market somewhere for an enterprising young lass willing to set herself up to make a few hundred litres of nut milks (or the like) every day?

this was an amazingly easy recipe to execute.  instead of baking powder, i found that baking soda worked just as well. these tasted just like pancakes, and i was happy to feel good about not eating eggs and butter and stuff. instead of cinnamon, i remmeber adding a little bit of applesauce with cinnamon to even it out. these burned a little when i cooked them, but other than that, i was pleased.

so i tried to make these pancakes twice. i couldn't get them to cook in the centre. they were all doughy and gooky. i tried to thin them out with lots of soy milk and everything and nothing would work. my friends and i couldn't figure it out. what went wrong? any ideas?
mine came out gookie in the middle too but I really screwed up I didn't have soy milk and I tried using ill never try that one again. I really want to try these they look great but can i make my own soy/rice etc. milk how can I do that?

these are totally delicious! i followed the recipe exactly, but added a handful of crushed walnuts and served them with some flaked sweetened coconut on top.
yummm. highly reccommend these.

I copied the recipe as is but just doubled it. I did have to add a whole lot of extra soy milk though because the batter was so thick. My husband says the pancakes were too thick but tasted alright. I thoght they were ok. Next time maybe I'll add an extra banana or even more soy milk.

My kids loved them. In fact, my 8 yr. old son ate his first two without syrup and exclaimed, "These are great!" Thanks for the recipe.

Mmm, these were perfect, I doubled the recipe added a very little bit more baking powder and a couple splashes of soymilk until it was pancake consistancy.

These were brilliant. Best pancakes ever. I used 1 tsp of ground cinnamon and instead of sugar I had a 1/4 cup of maple syrup. Oh and I used a whole banana. I served with banana, shredded coconut, frozen blueberries and maple syrup. (see photo). Thank you for this brilliant recipe. And anyone reading this: TRY IT!!

Excellent! Our favorite pancake recipe.

Some modifications:
- Used 2 ripe bananas, divided. One mashed banana was added to the batter, the other one sliced and cooked on the skillet separately for a banana topping!
- Did only 1/2 tsp vanilla extract.
- Added a little more than 1/2 tsp of cinnamon. Also topped the pancakes with some cinnamon when done cooking.
- Used 4 1/2 tsp Splenda Brown Sugar Blend instead of 1 Tbsp brown sugar, although it could most likely be reduced.
- Added 1 Tbsp ground flaxseeds.
- Used only 3/4 cup stone ground whole wheat flour.

These pancakes are so tasty! They are very hearty, filling, and healthy. Thick cakes makes it soft and fluffy. We serve with sugar free maple syrup or apricot all-fruit preserves. You could even serve them with a date puree filling. It is a simple and versatile recipe. Thanks! Cool

Yum! These were so easy to make and turned out perfectly. Normally when I make pancakes they turn into dense mushy piles - not these! I omitted the cinnamon, put everything in a blender and added extra soymilk until it was pourable. Highly recommended!

This recipe was fantastic.
I substututed the vanilla for organic carob powder and i also added a handful of almonds.

Just tried these today.  I really liked them - especially as they had no oil in (all other vegan pancake recipes I've tried have had lots of oil in).
I loved the fact that all the ingredients are things I always have in my cupboard.  A good weekend breakfast!

I love vegan cakes! They're so good my boyfriend and I could eat them for all three meals of the day. I like to use whole wheat flour usually and mixing in some old fashioned oats creates a nice texture. These are fun because you can experiment in so many ways and never really go wrong.
