Apple Cinnamon Pancakes

Ingredients (use vegan versions):

    1 cup unbleached all-purpose flour
    1 tablespoon sugar
    2 teaspoons baking powder
    1/8 teaspoon salt
    1 cup vanilla soy milk
    2 tablespoons vegetable or olive oil
    1 teaspoon ground cinnamon
    3 tablespoons apple sauce
    1/2 teaspoon pure vanilla extract

Directions:

Combine the flour, vegan sugar, baking powder, salt, and vanilla soy milk in a bowl and mix thoroughly. Mix in the ground cinnamon, apple sauce, and pour vanilla extract until smooth.

Pour about 1/2 cup (if you like big thick pancakes)on to hot, oiled griddle. In about 2 minutes bubbles will appear on the upper surface of the pancake, flip the pancake with spatula. Cook for another 2 minutes.

Tastes great served with maple or fruit syrup.

Makes: 4-6 pancakes, Preparation time: 10 minutes, Cooking time: 4-5 minutes

I also added slices of apple to the batter, which added more yummy apple-ness.
I just used plain soy milk, and it was fine.

Good recipe. I used cinnamon applesause and plain soymilk. I also added more sugar because I wasnt using any syrup. I don't recommend using olive oil though, either vegetable oil or more applesause.

Delicious.  Mmm!  I used a little over a quarter cup of applesauce, no oil, and I sliced up an apple nice and thin and folded that into the batter.  Ate 'em with maple syrup.  So good!  Damned if I didn't just eat the whole yield of the recipe myself.  Whew! Smiley

really nice.
i think sugar should be upped because i found them not sweet enough, however they're just perfect if you use sweet topping like jam or syrup. 1/2 teaspoon of cinnamon was fine, i don't like if cinnamon gets bitter.
these were first 'puffy/spongy' kind i made and i loved them. even my mother ate 3!

I was VERY excited to try these.  I doubled the sugar like some people suggested but it was still very bland.  I kept adding more sugar to the batter after trying the pancakes  and didn't really taste like anything to me...  No offense to the person that submitted the recipe but I was really hoping for an apple cinnamon taste and this didn't deliver it.   Sad

the BF and I tried these a couple weekends ago for breakfast. i always get nervous to make pancakes because my dad always made them for me so i don't necesarily know how to cook them correctly, but these came out looking absolutely perfect!

they made the house smell delicious and with the amount of batter, we came out with 6 large pancakes (used a 1/4 cup scoop)

i liked them but next time i might put a little less cinnamon in there because they had that kind of cinnamon bite to them and i like a sweeter cinnamon taste. and i'll have to remember to put syrup on as i go because they absorbed it very quickly and became soggy.

but this recipe is delicious and ihad to keep myelf from eating them right off the plate while the others cooked  Smiley

I love these pancakes! I make them at least once every week.
the only thing I change is I replace the oil with more applesauce.

Like others, I increased the sugar.  Should've added sliced apples, yum!  I did increase the applesauce by nearly double to get as much apple flavor as possible.  I also increased the cinnamon - would increase it even more next time. 

Serving suggestion - top the pancakes with more applesauce, a little vanilla Silk yogurt, and a sprinkling of cinnamon - mmmmmm.....!

Wonderful!  These were the best apple pancakes I have ever had!  My family loved them.  I doubled the recipe, and it made a ton.  I did make a few changes.  These changes are based on doubling the amounts in the original recipe.  I used a 1/2 cup of sugar, 1 teaspoon of kosher salt, 1 teaspoon of freshly ground nutmeg, and  one diced Fuji apple.  I also substituted almond extract for the vanilla and I used cinnamon applesauce instead of plain applesauce.
