Delicious Low-fat Whole Wheat Pancakes

Ingredients (use vegan versions):

    1 cup +2 tablespoon whole wheat flour
    1 tablespoon brown sugar
    2 tablespoon apple sauce
    1 cup -2 tablespoon water or fat free soy milk
    1 1/2 teaspoon baking powder
    pinch of salt
    optional:
    1/2 cup walnuts or 1/2 cup blueberries or other fruit

Directions:

Combine all dry ingredients, mix together.  Add apple sauce, water/soy milk and mix till batter drips from spoon, but is not runny.  *optional* gently stir in nuts/fruit.

Heat griddle/frying pan and spray with cooking spray.  Dip your finger in some water and flick it onto the surface of the pan.  If it sizzles, its time to fry up some yummy pancakes.

Laddle about 1/4 cup of batter into the pan and let it cook until small bubbles form in the center and/or edges are cooked about 8 cm from the middle.  Flip those babies over.  Keep them warm in a preheated oven covered with a paper towel to keep the moisture in.

Enjoy!  Nutrition info: Each pancake prepared with water (the recipe makes approx. Cool excluding any added nuts/fruits/syrups contains about:  56 calores 2 g protein 1.8 g dietary fiber 12.3 g carbohydrates 1.75 g vegan sugars .25 g fat

Serves: 8 20cm cakes

Preparation time: 2 min.


WOW...I used 1/2 of a ripe banana in place of the applesauce and added a pinch of cinammon.  YUMMY!!  Serve with peanut butter and syrup - its good enough for dessert!

I really liked this pancakes - so healthy, so easy to make, and so tasty! I added bananas to half of mine, but like the plain ones better. Cant wait to try more combinations...

Wow! THESE PANCAKES ARE AWESOME! I bought a bottle of organic dark amber (Grade C) at the market today and these were perfect with it!!  Theyre a bit denser than pancakes made with eggs, but still great. Thanks for posting!

My husband made them for me last night with some cinnamon as suggested. These were absolutely great.  He made 4 hearty pancakes out of the batter so I ate two for dinner last night and two for breakfast!!  Spectacular!!

Our batter made 5 decent sized pancakes.  We added walnuts and blueberries, and a touch more soymilk than stated.  Excellent.  Thank you for the recipe.  Smiley

I've had some bad luck with vegan pancakes in the past. I've found that they tend to be bland and unpleasantly floppy. These, howe'ver, are fabulous! What a great recipe. Light, fluffy, even. Thanks so much!

We made these this morning, and they were delicious!  Just like the ones my mom made me when I was younger.  My partner still isn't too keen on whole wheat items, so I'll probably try them with whole grain spelt next time.  Thanks for the tasty and quick recipe!

I made these this morning! They were great! I pretty much killed the "low fat" part by adding a handful of chocolate chips but they still tasted awesome! once again...GREAT RECIPE!! Smiley

I added some 2/3 cup of mashed pumpkin, and added 1/4 cup of walnuts, and made Pumpkin Walnut Pumpkin Pancakes.

Yummy.

I've made these twice now, and I love them. The first time I made them, I actually forgot to add in the brown sugar (but compensated with a cinnamon sugar topping). The second time I made them, I used cinnamon applesauce, and added about 3/4 tbsp of cinnamon to the batter, and they were fantastic. Definitely a new favorite of mine.

I absolutely love these pancakes!  I've been using this recipe for about two years now, maybe three, and everyone (vegan, vegetarian, and meat-eaters) loves them.

Good and healthy! Might be good with orange zest or cinnamon.

Made some minor changes:
used spelt flour
didn't use any brown sugar
used 1 Tbsp baking powder
used flaxseed meal instead of applesauce
mixed 1/4 cup apricot jam into the batter, and then cut down the soy milk to 3/4 cup plus 2 Tbsp
Topped it with a cooked prune maple syrup mixture.

Made four big, thick pancakes.

I was skeptical about the whole... all whole wheat thing... but I added some extra sugar, and a few mini chocolate chips.. and wow, they were good. And the best texture of vegan pancakes I have tried.

Really good. The texture, the way they cook and everything is perfect. the only thing I was slightly unhappy with is the flavour.. which may well be my fault (I changed things a bit: spelt flour, tbs molasses, 1/3'd the recipe, homemade - with skin - applesauce, cinnamon and vanilla) I was amazed that they turned out so well, however, even with those changes. Their appearance and texture are unbeatable.. Just gotta do something about the flavour. I had trouble turning them over purely because I didn't use non-stick spray, and even so they looked better than many other recipes I've tried.
Served them with date-carob syrup (5 small soaked dates, whizzed up in blender with water and 1 1/2 /2 tsp carob powder), strawberries and soy milk.
Yay! thanks! I kinda feel sick now though.. lol.

Just the huge amount of molasses I used which made them different.
Thickest and fluffiest pancakes ever!
