Cinnamon-Apple Waffles

Ingredients (use vegan versions):

    3 eggs worth of egg-replacer
    1 cup soy milk
    1/3 to 1/2 cup oil (canola is best)
    2 cups flour
    1/2 teaspoon salt
    1 tablespoon baking powder
    2 teaspoons sugar
    1 large apple, peeled and shredded
    1 teaspoon vanilla
    1/2 teaspoon cinnamon

Directions:

Beat Ener-G Egg Replacer in bowl until thick. ( I used 4.5 teaspoons of egg-replacer powder and 6 tablespoons of water) Beat soymilk and oil into Ener-G Egg Replacer.  Add vanilla. In a separate bowl, combine remaining ingredients except the apple. Sift into egg mixture and mix well. Stir in grated apple. In a waffle maker, spred about 1 cup of batter over the bottom heating plates, or enough to completely cover the surface. Normal cooking time will be 3-6 minutes for each waffle. Its best to check the directions that come with your waffle maker.

Serves: approx. 8 waffles

Preparation time: 15 minutes


These are great tasting, easy to make waffles! My daughter and I just had them for breakfast - yum!  I added a handful of finely chopped walnuts. These could also be toasted and sprinkled on top.  Thanks for the great waffle recipe!

These are great! I use different flours (amaranth, spelt, etc) and always put a bit of whole flour in for some fibre. My grandma loves these!

I think a *tad* bit more sugar/sweetener could be added...or maybe I didn't use enough apple as a natural sweetener.  I think I might try using apple sauce instead of oil next time, for extra flavor and less fat Smiley  Overall a great recipe I will try again!

These are absolutely wonderful!  We didn't use the apples the first time around but they came out perfectly delicious anyway.

This was fabulous!!  Although, I halved the recipe.  I used Wonderslim as an egg replacer, rice milk, sea salt.  I also used the suggestions and added a little extra sugar and vanilla.  I ended up needing exta milk and 1/2 cup oil for the right consistency.  I didn't use the apples or cinnamon, but I will next time. **** I also tried adding rice protein powder to the second half of the batter (with little exta milk) and this actually tasted pretty good, despite the fact that I hate my protein powder!

Thanks for the recipe...these were delicious!  We topped them off with chopped walnuts and maple syrup.  We also used a little less flour than was called for.
