I love these pancakes!  I recommend reducing the baking powder slightly and adding more liquid, as they tend to be crazy thick otherwise (and subject to uneven cooking...)  Here's my version:

    2 1/2 cups all purpose flour
    2 T sugar
    1 T baking powder
    1 T vegetable oil
    1 tsp salt
    3 cups vanilla almond milk
    1 tsp cinnamon
    2 bananas, sliced

I fry it with the bananas in the batter to make them sweet, then top them with blueberries or peanut butter, and maple syrup

This was great.  I made them into buttermilk pancakes by using a T. of vinager in the soymilk.  that made them so light and fluffy.  I also added a tsp. of vanilla.  These were the best I have found. thanks. Kiss

made these for brunch. my boyfriend also enjoyed them. Made too much for the both of us, but I decided to gobble up the rest the next day!! Smiley Yum Yum Cheesy

wow. wow. wow! Thumbs Up what a winner!
i used pumpkin and blue diamond almond milk for the liquid - i also put a  little pumpkin spice blend. This is the reason to cook at home because i have never tasted anything this good in a restaurant -  vegan or othewise.

These were really terrific, but I can't seem to make anything without playing around with it -- so here's what I did.  I have a grain mill, so I used 2/3 whole wheat and 1/3 oat flour (approx.), finely ground, added cinnamon, nutmeg, vanilla, about 4 T. ground flaxseeds, 4 sliced bananas, 3 T. maple syrup, and some toasted walnuts.  Also left out the oil, and added lots of water to thin the batter  -- maybe 1 1/2 cups.  They're our new household favorites!   Grin

This is a great little recipe when you are short on supplies but want something quick and yummy Smiley

My pancakes turned out moist, fluffy, and delicious! I really like having such an easy recipe on hand because this is forgiving to changes and additions. I'm going to add a little vanilla and vegan chocolate chips to the next batch (i.e. tomorrow's breakfast!).

I'm making a pancake birthday cake for my boyfriend using this recipe! I make these all the time, and they are super simple and really delicious. Definitely reccomend this recipe.
