eek i had trouble with these. no matter how much sugar i added, the batter was still salty and bitter. maple syrup, vanilla extract, and blueberries were the only life saver. i think it had to do with the full 2 tbsp baking powder (i was going to do only 1 but i wanted extra-fluffy pancakes) we did eat them all up, but afterwardwards i made up a quick batch from a boxed pre-mix to use up our remaining fresh blueberries and we decided that the box mix is fool proof and delicious.

I usually make 1/2 the recipe, but last weekend I had guests and made a full batch.  It made 5 seriously over-sized pancakes!  Yummy, as always, but I'll stick to 1/2 a batch.

Just made this morning. I was a little worried because I only had bread flour, not all-purpose, and forgot to add the vegetable oil at the beginning (I folded it in after the first resting period). Two deliberate modifications: (1) shifted the dry ingredients together first and (2) folded in blueberries just before frying.

It turned out quite nicely. My husband, a pancake lover, enjoyed them. I only found them a little sweet (but I seem to say that about every recipe, so I probably just have weird taste buds). The recipe was definitely plenty for four people and could even be halved when serving four people with other side dishes.

I always make the worst pancakes. PERFECT. These wer great. I added fresh blueberries in some and i was amazed. I had everything on hand. Delicious Recipe. Thank  you  Thumbs Up

Thumbs Up Great recipe! I made the pancakes exactly as the recipe states and the 1st 6 came out really yummy (then the pan got too hot or something? I dunno, but no worries. 6 fed my husband and I quite nicely Smiley ). I experimented with a sauce... I'm gonna guess at the quantities...

1 1/2 cups frozen blueberries (thawed)
3/4 cup maple syrup   
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1/2 tsp salt
(use your judgement as I may be off on amounts here)

I mixed all together over a low heat until the syrup bubbled a little then poured the mixture over the pancakes.

My hubby said, "...maybe the best vegan breakfast I've ever had..." YAY!!! Home run!!! (Even though I may be a little sugar comatosed now, lol). Maybe I'll try agave rather than maple syrup next time.

Excellent recipe. Since becoming vegan about two years ago I have not made pancakes for my pancake-loving girlfriend.  This morning I gave it a try and they came out great. She thanks you! (as do I)

I just made these and they were really yummy. I added lots of cinnamon, some vanilla extract and some maple syrup to the batter. They came out great, better than box-mix pancakes. I served them with some butter, cinnamon and maple syrup on top. Smiley Yum!

DEEELICIOUS!  These truly turned out perfect. I made a double batch for 4 hungry people and it was SO much (31 thick, 1/4 cup pancakes), so we have tons of yummy leftover pancakes. Try adding 1/4 cup (or more) carob chips to a batch.

For the diabetics out there...258 g/carbs per batch (with whole wheat pastry flour=21g/ 1/4 cup and unsweetened silk=4g/ cup).  I got about 15 pancakes 1/4 cup each batter 16.5 g carbs per pancake.  With 45 g carob chips added (just over 1/4 cup) add 66 g carb to batch.

these are soo good i just finnished making them and my preschoolers and toddlers ate them up and asked for seconds and thirds (even the toddler walked around with her pancake too) thanks for this great recipe (i did half the recipe)

I have made these so many times and they always come out awesome. Fluffy and smooth. My favorite way to have them is to mix a little bit of maple syrup with some thawed frozen berries (mash them a little with a fork so the juices mix with the maple) and plop that on top of them. Thank you very much for this recipe... its well used in our vegan house!

Mahalo for the recipe.  These are the best pancakes that I have ever eatin.  My Husband eats all kind foods and he loved these so much that he will never make a non-vegan pancake for himself again.  We had a great breakfast and really enjoyed them.  We followed the recipe exactly and it came out perfect.  The true trick really is to NOT over mix and to leave it "looking" lumpy before it goes onto the skillet.  They came out 100% great.  Again Mahalo Plenty.   -Aloha.
