Easy Pancakes

Ingredients (use vegan versions):

    2 1/2 cups all purpose flour
    2 tablespoon sugar
    2 tablespoon baking powder
    1 tablespoon vegetable oil
    1 teaspoon salt
    2 1/2 cups soy milk or water
    (optional: dash of cinnamon)

Directions:

This recipe, simple as it is, always gets requested!

Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. Its important only to mix the batter enough to moisten, as overmixing will make the pancakes tough. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyones starving!) Cook medium to medium-high on an oiled skillet till golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Serves: 4

Preparation time: 20-30 mins.

this is the absolutely best pancake recipee you will ever try (vegan or not).  if things turned out too heavy, you're mixing things too much.  its hard, but you have to leave it a bit lumpy.  i promise, everyone will love these.

These turned out excellent!  I hadn't had pancakes since I turned vegan (about 2 years), was craving them this morning, found the recipe, etc.  I used whole wheat pastry flour (what I had on hand) and the result was spectacular.  Many kudos!

I was very pleased with these cakes.  I personalized it alittle bit by substituting 1 1/4 c. ground oatmeal and 1 1/4 c. whole wheat pastry flour for the all purpose flour that it called for.  This recipe is wonderful if you food combine and it is going in my permanent files.

These were excellent pancakes.  Others I have made are heavy and doughy without eggs, but these were great.  I only let them rest twice for 5 minutes.  Howe'ver, definitely oil the pan.  The first batch, I didn't oil my nonstick pan and that was NOT a good idea!

These were wonderful with apples and a lot of cinamon.  They work better for me if I leave them in the fridge over night.  They are less lumpy that way.

Very good...but WAY too much baking powder...I'd only add one tablespoon next time. Because they rose so high, it was hard for the center sometimes to cook thoroughly...otherwise this is easy and yummy. Its gone in my recipe box.  Love that hint of cinnamon!

Let me just say: BEST PANCAKES EVER!!!! This recipe worked perfectly even though I am notorious for bad, bad burnt on the outside, raw on the inside, flat, nasty pancakes. Everyone should try it.

As a single cook, I fifth-ed the recipe, and also used whole wheat flour (king arthur), added blueberries, and used water instead of the soy milk. After cooking them on the stove, I toasted them in the toaster oven for about two minutes. They came out WONDERFUL. Without a doubt, they were the best pancakes I've made or had elsewhere. Now I know I'll never have to search for another pancake recipe again. I'd recommend to anyone else the addition of berries to the batter, they greatly augmented the final product. I'm looking forward to making them again soon, maybe with the addition of oatmeal or flax seeds (I'm sure they'll turn out great!)

This is a very good basic recipe. I added my favorite granola and some dried cranberries to the mix. I didn't use quite so much baking powder, though. I only used about 1 1/2 tsp and they turned out just fine.

mmm mmmm...delicious!  these are far superior to the pancake mixes you buy at the store! they taste soo much better than the ones made w/ milk, dairy, or eggs. topped with some syrup, these were SOO GOOD! i used whole wheat flour instead.

WOW!! Thats all I have to say. But I'm gonna go on because they were AMAZING!! I served them to my brother and his girlfriend as well, both non-vegans, They were amazed at how they tasted so much like regular pancakes. I actually told my brother at first that they had eggs and milk in it, just to see his reaction to them, without thinking that they'd be terrible just because they're vegan. He couldnt believe it when I told him they were actually vegan. He gobbled the rest down like there was no tomorrow! Theyre WONDERFUL! Just a little tip though... When I first saw the batter was all bumpy, my first instincts were to mix until there were no more lumps. I stuck to the recipe though, and left it the way it was. As I was pouring the batter onto the skillet, I couldnt have been more prepared to be eating the worst pancakes ever, I thought it would be almost impossible for all those lumps to dissappear when the pancake was done. Well, I was wrong. They came out perfect, round, just the right shade of golden brown, and just the right flavor of YUMMY. I give this recipe a two thumbs up, and a golden star... Five to be exact. Make this recipe immediately, or you'll really be missing out!!

I used almond milk (can't use much soy at all) and coconut oil. To melt the oil I slightly heated the last 1/2 C. milk  and mixed the oil with that before adding it. I took the hint to cut the baking powder in half.  After the first pancake, I thinned the batter a little, too. The hint of coconut with the cinnamon made a delicious combination. I won't stir as much next time, but they still turned out well. I'll use this recipe again.

Oh my gosh!!!  These were sooo yummy!!!  I see all these people added and changed the recipe a little, which is the fun of cooking, but this recipe needs no change.  I loved how they rose, and if it looked like the center wasn't cooking, I just pressed them down a bit. These were so good, I didn't even use syrup or anything to eat them with.  And they weren too heavy or over-filling like the pancakes I remember.  Thank you for this delicious recipe!!!  I will be making there at least once a week!

ABSOLUTELY THE BEST PANCAKE EVER! my boyfriend is a pancake addict, although he isn't vegan he made these anyways when i gave him the recipe because he LOVES pancakes and is VERY picky about them. here is what he did:  after first mixing the ingredients (just until wet), wait appx. 10 minutes. do this again three more times very lightly (just turn mixture downwards like recipe says). make sure to NOT over mix. altogether, the dough sat for about 40 minutes. he made medium-sized (4 diameter) pancakes that were THICK, FLUFFY, GOLDEN AND OMIGOSH, DE-LISH! we made a full recipes-worth and are freezing the leftovers! THANK U!

I followed the directions exactly, not mixing very much and letting them rise, and the pancakes still turned out very heavy and didn't have a very good flavor.  I think this recipe is better suited for people who like huge, thick pancakes.  If you prefer thinner, crepe-style pancakes, this recipe is not for you.

i love these pancakes! i make them every weekend for breakfast! i like them with cup plain soymilk and a cup and a half of vanilla...it gives them a little different flavor but its wonderful!

These are superior pancakes! I also resisted the urge to mix those lumps out! I was skeptical, then pleasantly surprised! This recipe is almost identical to the pancake recipe on the side of the EnerG egg replacer box (adding sugar and switching egg replacer w/ baking powder), which I found I had to add more soymilk to for the right consistency. With that touch, they taste good, but not fabulous, so I will try this recipe and see if it makes a difference!

The recipe as written is pretty good, but I found the batter too thin with the 2 1/12 c. soymilk. I only did 2 c. and substituted buckwheat and soy flour for 1/2 c. of the flour and whole wheat for the other 3/4 c. of flour.  I used maple sugar for the sweetener and added some cinnamon and numeg.  The third time I made them I also used tofu instead of oil, added more soymild cause then it was too thick...THIS WAS AWSOME. Less fat and they actually came out a wee bit fluffier.  I have also added strawberries and used strawberry syrup before and that was great too.

THESE ARE AWESOME! We had breakfast for dinner last nite (pancakes, tofu scramble, hash browns) and both my meat-eating mom and meat-eating best friend said they were delicious. My mom said she was shocked at how light they were and said they were the best pancakes she has ever had. She also said that with all this good food, she just might go vegan (yay!).  I took all the wet ingredients and put them in a bowl and then added all the dry ingredients and stirred it just enough to moisten everything. Delicious and I will be making it again.

Excellent pancakes!  Super easy indeed!  Not beating them totally smooth definitely works, and oiling the pan well makes a huge difference.  I really enjoyed them topped with glazed apples (apple chunks sauteed with molasses, margarine/oil, and cinnamon).  Fast, simple, delicious - they pleased two omnivores as well as this vegan.

I always found that my vegan pancakes came out too heavy (or rather, came out ok and then immediately turned heavy), until today, I tried soy sour cream in the batter (3 generous tablespoons per 4-6 pancakes)--not only was the texture of the pancakes close to perfect, but the taste was improved too! Yumm.

When I made these I followed the recipe exactly, even adding less than 2 tablespoon of baking powder and the baking powder still overpowered the taste. It left a sour feeling in my stomach. Did anyone else have this trouble? Where did I go wrong? If it wasn't for this, these pancake would've turned out flawless.

How embarrassing! Forget my question. When I wrote the recipe down, I wrote it down for 1 tablespoon of salt, which affected the taste (3X as much salt!). I'll definitely do try this again. If I didn't tamper with the salt, then these would've turned out delicious.

I made this a second time and with the correct amount of ingredients and it came out superb! I couldnt even tell they were vegan. If you're looking for a variation, try putting some peanut butter in the batter. it adds a good flavor. I am left to wonder, why did they ever make pancakes with dairy products? thank u!

I snatched this recipe about 10 minutes ago and made some pancakes! A great recipe!  Probably the fluffiest pancakes I've ever had.  They came out a little heavy, but I'm a compulsive about sturing things (I mess up a lot of things that way).  Everyone should try this recipe, it rocks! these pancakes are awesome! i halved the recipe and also, i didn't have any baking powder, so i omitted that and added a bit of flaxmeal. added the cinnamon and it made a world of difference. thank you for this.. i totally tricked my non-veg friends

Yum, I made these for brunch last week and they were great!  I added vanilla extract and cinnamon for a bit more flavor.  They were pretty dense, but I think my compulsive stirring is to blame so I'll try to go easy on that next time.  Ack I'm getting hungry just thinking about the sweet pancakey goodness...

I just made these, only I halved the recipe, I put in one teaspoon of vanilla essence and just under half a teaspoon of cinnamon, (although I'd probably do a little less next time), and these were amazing!  My mum and my grandad (who is 79 and has very little time for "all that 'vegetarian nonsense', meat and dairy is there to be eaten") both absoutely LOVED these!  My grandad couldn't stop singing their praises!

These were absolutely delicious!  Although my only thing I can say is I had to cook mine on a really low heat, but this may be because of my mother's weird hob that seems determined to cook everything as quickly as possible, but on the scale of 1-9.5 I had to cook them on 3 because on 5 they burnt, and quickly.

I've made these twice now. They're really good-- I used melted coconut oil for the oil in the recipe as well as for cooking. However, the further along in the batch I get, the longer it seems to take them to cook. Not sure what's up with that. Still, it's a great recipe. They're great even cold!  Smiley

I've been vegan for eight years, but I've just now started actually cooking. These pancakes are absolutely amazing. Why would you make pancakes from a box when it's so simple to make them from scratch, vegan or non vegan? I added vanilla and almond extract and cinnamon, as well.

try this variation:

half spelt flour
half corm meal
sub almond milk for soy
top with walnuts, banana slices, and agave nectar!!

Oh. My. Goodess. These are the best pancakes ever. I subbed in a tablespoon of lemon juice for a some of the soymilk, and added a bit of lemon and orange zest. I also made an orange syrup for them, and they turned out light and fluffy- perfect! Thanks!

I don't know why I have so much trouble with vegan pancakes. They always turn out funky, as if the outside is overcooked and crunchy (but not burnt) and the inside is slightly undercooked and gummy, and they never really get "golden brown." This goes for almost all vegan pancake recipes I have tried. I follow the recipes closely, too - even made sure to barely mix, as suggested. The only good vegan pancakes I make come from Aunt Jemima mix, but I'd rather avoid making those because of all the preservatives and crap. Does anyone have any advice??

Hi UhBlondie, I usually cook mine on a fairly low heat (gas mark 2) in a well-greased frying pan, then, after the top has set and bubbles have formed, flip (carefully!) and turn up the heat to 3 or 4 for a few seconds to crisp up. I find if you don't use much oil, you can get white and dark bits, but if you average a couple tablespoons per pancake assuming a fairly large surface area, that should work My cooker's a bit tempremental and that always seems to work for me! Good luck.

It sounds more like you're cooking them at too high of a heat.  Turn the burner on, add a touch of oil, and let it sit for a few minutes.  Before you put the pancakes in, flick some water into the pan.  The water should sizzle a bit but shouldn't pop all over the place (if it does, the pan is too hot).  I find that getting the temperature right is the hardest part about cooking pankcakes!
