Best eggs in the World

Ingredients (use vegan versions):

    1/3 to 1/2 lb firm tofu
    1/2 to 1 tablespoon chopped garlic (to taste)
    1 capful olive oil (or an adequate amount of oil/butter spray)
    6 med. mushrooms
    1 tomato
    1 small grated carrot (provides texture and a bit of sweetness)
    Onion if desired
    Chili Powder
    1-2 slices veggie cheese made from soy with NO animal products!

Directions:

Begin by placing garlic and small amount oil in medium saucepan on low to medium heat.  Next dice tofu to desired thickness (I chop 1/4 a block for myself, and 1/3 to 1/2  for two) and add to garlic. Let the tofu soak up the flavor while you chop up the mushrooms, tomato, and onion (optional) , and grate the carrot-I often use a couple baby carrots because of exceptional sweetness! Add veggies to  tofu in pan and let cook for a few minutes. At this point you can add chili powder as desired, I usually put in enough to give it a fairly red color. A small amount of soy or rice milk can be added to change consistancy, but not too much or it will be too liquidy. The last step is to add in 1-2 slices of a soy cheese (optional) to give it a creamy, cheesey flavor without any of the animal products!

Enjoy! This has become a morning standard for me!

I just think this sounds perfectly delicious...do think garlic,onion and chili powder is plenty of seasonings...prehaps I would try some thyme, parsley, or basil...but, what the heck, each to his own tast...great egg recipe....thanks...

For a more egg-like look, a little turmeric will give a yellow color to the dish.

i just made this recipe for lunch, and its -so- good!!  yum!  i left out the mushrooms and the soy cheese, but i think next time i will add the cheese.  this is really satisfying, especially with some toast. its easy to make too!  thanks.

I was just wondering, if you dice the tofu instead of actually mashing it, does it stick together and form something like eggs or is it more like... fried tofu cubes with vegetables?

regarding Peters comment, if you freeze the tofu first, then it has more of an egg-like consistency.

I was at a vegan restaurant yesterday and had sauteed and marinated tofu as egg substitutes.  What makes this taste like eggs?  Its delicious and I want to make this at home!  I have absolutely NO experience with TOFU in recipes, so I need some help as to what kitchen tools needed to play with it, etc.

absolutely awesome!! I used tomato sauce instead of tomatoes and forgot the vegan cheese (even though I had some sitting in the fridge) I'll definitely be making this again!! =)

I registered just now so I can comment about this recipe.  Its so yummy!  I just made it for my breakfast, with mushrooms and olives and it was delicious.  I'm new when it comes to tofu so I was pleasantly surprised at how easy and flavorful this was.  I did cube the tofu instead of mashing it and it was still great.  Thanks for the recipe!

we make this with nutritional yeast instead of vegan cheese - it has the same effect, I think - you do have to use quite a bit, howe'ver.  also, spike seasoning adds alot of flavor.

I just tried this today. The first few bites weren't all that great, but I kept eating it, and it got better.  I omitted the mushrooms (yuck!) and the tomato (didn't have any).  I added Mrs. Dash Italian Blend and some salt and pepper.  It was definitely something I'm going to have to get used to since I'm new to the vegan scene.

Greetings, I've never really experimented with Tofu but heard its a good protein alternative ... and today I cooked veggie burgers (Yves) and a recipe for veggie Spanish rice on here, needless to say he wasn't couched after work and had more energy ... let the vegans speak!  PS I'm new to this site.

well i made it like it said,but also added tomato sauce and the tofutti mozerlla cheese ,it was a lil spicy for me for sumreason and aso i added tomato on top and a lil mustard it wasn't salty which to me it tasted plain sstill,but topped on whole wheat bread it was gggooooooooooooooood
