stingray@netins.netBetter Than Oatmeal.....Its Bulgur!!!!!Ingredients (use vegan versions): 2/3 cups bulgur (dried cracked wheat)
1 1/3 cups cold water
dried fruit of choice, chopped (I love craisins, apricots, raisins, papaya)
nuts (pecans are yummy!)
favorite spices (cinnamon or nutmeg work well)
seeds (sunflower, pumpkin)
brown rice syrup
Directions:Add the bulgur to cold water, bring to a boil, and then down to a simmer. Simmer in a covered pan for 12-15 minutes. I love to cook it so that it pops out, a little like popcorn, and is very moist like oatmeal. After it is cooked thoroughly, add the dried fruit, seeds, and nuts...howe'ver much you want. A handful of each, perhaps. Its your recipe now. Add spices if you want. Then, put it in a cute little bowl and drizzle it with plenty o syrup. I must admit I used honey, but brown rice syrup, corn syrup, or maple syrup would all work very well. Serve hot! Leftovers can be refrigerated, preferably without the syrup on top. Eat leftovers within a couple days. Yum.

This has become a regular breakfast in my house. Lesson learned the hard way: Wash your bulgar before cooking. Theres nothing like the crunch of dirt between your teeth to wake you up in the morning!

Are you using a particular cut of bulger? It comes in three sizes (#1,2,3) based on the fineness of the cut. I imagine it would work with all of them, but cooking times & textures are different for each.

I love this recipe. It is versatile and easy, I also add fresh fruit, like pears and apples, to the water while it is boiling and they are cooked by the time the bulgar is done. I'm not sure about the different cuts of bulgar, our co-op only carries one kind. I suggest keep checking it until the water is absorbed, that's what I do.

I tried this and it was great. My 11 month old son (who usually eats oatmeal) loved it too. I added some rice milk after it was cooked for a creamier texture and it is great with apricots, cinnamon and almond butter. Thanks for the recipe.

I don't like hot cereal, so I tried this cold. Excellent. Almond milk and maple syrup go very well with it.

I love this for breakfast also, try cooking it in milk or soymilk for more protein if you want.

for those who like honey but don't want to eat it - try agave nectar! its sweet and sticky but from a cactus. and it has a very low glycemic index for people with blood sugar issues.

Delicious!!! For a super easy breakfast I defrost a few frozen berries. I put the bulgur on top then spoon on some soy yogurt I've flavored with almond extract. Yum!!
