Easy Oatmeal

Ingredients (use vegan versions):

    2/3 cup of 100% oatmeal (large flakes-no quick stuff)
    approx. 1 cup of water
    1/4 cup raisins

Directions:

Put the oatmeal into a bowl, add the raisins.  Then pour in enough water so that it covers the oatmeal completely.  Cover it and place it in the fridge over night.  Throughout the night, the oatmeal has soaked up the water and sweetness of the raisins.  In the morning, you can enjoy a cool, fresh tasting bowl of oatmeal.  Not cooking it helps it maintain its full nutrients.

Serves: One

Preparation time: 2 minutes

This is SO good! I love that this is ready when I get up in the morning! And since I don't have to wait for it to warm up, my mornings feel a lot calmer now!! Thanx for a great recipe!!=) =) My variation is: Use vanilla soymilk instead of water (I like it thick so I use just enough to barely coat the oatmeal), and then in the morning add half of a smashed banana for sweetness and 2 tbsp. ground flaxseed. I also like to add a little sprinkle of sunflower seeds as well. SO yummy!! =)

Out of the fridge it came this morning ready to eat. It tastes great. I did exactly as the recipe called for. Next time I will add pumpkin seeds with the raisins. Pecans would be great to. Having them soak over night in the liquid will make them easier to digest as well.
