Hash Browns

Ingredients (use vegan versions):

    1 or 2 potatoes
    Oil
    Salt

Directions:

Grate potatoes and mix with salt to taste. Add oil to large skillet and fry till golden brown.

Serves: 1 to 2

Preparation time: 5


Hash browns are  best if cooked potatoes are used  ( great for leftover spuds, they neednt be grated, chopped chunks are good.)  Or, grate the spuds the night before and allow to soak in ice water overnight in fridg.  The cook quicker and brown better at lower temps.  Try adding green onion, garlic, tomato, herbs...sour cream if you must!

I agree with k.  Leftover potatoes are great for these.  I think salt is fine if you don't eat too much.  Food is usually pretty bland without some salt on it.

whenever i fry potatoes, i just put them in the microwave to pre-cook them. This works fine. But for some reason, whenever i grate potatoes, they turn blue. (seriously!) It tastes really strange too. this does not happen when i cut them in big chunks. does anyone else have this problem? if so what do you do about it? I could grate them straight into the pan, but then they are undercooked, or if i leave them in longer they will burn. any suggestions?

emily: the reason they turn blue is that they are being exposed to oxygen. its perfectly normal Smiley try squeezing a bit of lemon juice over the grated potatoes, or else keeping them submerged in water until they're ready to be used. your best bet is to just work very quickly.

This recipe is quite possibly the most UNcomplicated recipe on vegweb.
If making this for a large number of people, consider getting a food processor. Most food processors have a blade that shreds and it cuts the prep time down.

Actually I would advocate food processors for anyone that cooks, especially veggies. You will be surprised how much you use it!

Simple yet sufficient, i added a tiny bit of chilli powder to mine just to add kick...very nice, perfect with veggie sausages (UK Linda McCartney style), Fried Mushrooms, Crumpets and a cuppa tea.....The Perfect Vegetarain Breakfast  Grin

It works a lot better if you squeeze out the grated raw potatoes in a few paper towels to get rid of the excess water. It makes them much crispier! I like mine with a ton of black pepper and some ketchup :} Yum!!

I made these for brunch and they were very tasty. Served them with Herby Mushroom Sausages. It took some time squeezing the excess water from the potatoes but it was worth it. I finished mine in the oven for that extra crispiness. Yum.  Wink

Yum! Of course, it is hard to go wrong with these 3 ingredients, but delicious nonetheless. :-) Mine did turn slightly blue AFTER frying (which I thought was odd), but they still tasted great so we just ignored it. Great with tofu scramble!

This was my first time to make actual hash browns (they've always seemed gross to me, for some reason), so I didn't think to squeeze out the moisture until after I started cooking them. I used two red potatoes, grated, mixed them with sauteed onions and jalapeno, s, p and garlic powder, and fried them. It was taking them a very long time to cook (who has cooked this in 5 minutes?!)..so they got brown on some sides..but did not get crispy. They had a good flavor though..b/c of all of the added things. If I make them again..I'll try it w/o excess moisture.  Huh

This is such a simple recipe and very good. I've never been that good at making hash browns but I've been practiving and I've gotten better. I used garlic flavored Olive oil and added some black pepper for flavor. So good especially when drowned in ketchup! Thanks!

im not much of a cook, but a little hint about hash browns...my grandmother always made me squeeze out the juice of the shredded potatos first so the potatoes wouldnt be quite so mushy. and no one cooked like my grandmother!
