These were awful. The vinegary tofu tasted almost like vomit, and I had a difficult time salvaging the rest of it into something edible. I think it's better to just use a tofu scramble recipe. Ugh. What a waste of time and ingredients.

Great recipe idea!  I forgot to marinate my "eggs" overnight, so they weren't as flavorful as they should be. 

I added tumeric to my eggs for color and replaced "bacon" with a thin slice of smoked tofu.

If anything does, this recipe dispels the myth that you can't have vegan 'comfort food'. Holy cow. Mine was probably a bit greasier, because I fried the tofu instead of baking it, but it was so good. Not something I would want every day, but it gets the job done during my 'man-periods'. ("man-struation?") When I fried it , I fried it also with nutritional yeast, and some cayenne & thyme. Super good.
