Chana Masala

Ingredients (use vegan versions):

    1 can garbanzo beans
    1 big onion very finely chopped or processed in a food processor/grinder
    1 inch piece of ginger grated
    1 clove garlic
    1/2 teaspoon turmeric powder
    1/4 teaspoon cayenne pepper
    1/2 teaspoon amchur powder (dried mango powder)
    1/2 teaspoon garam masala
    2 tablespoon oil
    salt to taste

Directions:

Heat oil in a frying pan. Add chopped onions and fry until golden brown.  Add all the spices (except mango powder), crushed garlic and grated ginger to it.

Fry for about two-three minutes. Add garbanzo beans, salt and mango powder. Add about 1/2 cup of water and cook on low heat for about 15 minutes.  This will give some time for garbanzo beans to absorb all the spices.

Garam Masala: This can be bought ready made. The best way is to make it home.

Ingredients (use vegan versions):

    1 small stick cinnamon
    3 to 4 cloves
    4 to 5 black pepper
    1/2 teaspoon cumin seeds
    1/2 teaspoon coriander seeds

Directions:

Grind all the ingredients into powder.

This could be very spicy for people not used to spicy food. Reduce the amount of cayenne pepper and garam masala as desired for less spicy chana.


This is one of my favorite recipes.  I have made this a few times, and it has always been enjoyable

This sounds wonderful, but I was wondering if there were an appropriate spice to substitute for the coriander.  My husband is very allergic to it.  I would appreciate any recommendations.  I'm dying to try this recipe.  Thanks so much.

This looks really good, but I'm not sure what you mean by 4-5 black pepper??  I guess I can buy the garam masala ready made though!

For those who don't like the taste of coriander, or have an allergic reaction you can try substituting mint, or just delete the coriander!

I made it as the recipe called for except for the mango powder.  From the blank expression on the face of the guy at the local gorcery, I dediced that it wasn't availabe.  I substituted 1/4 cup mango nectar.  It was very good.

The recipe sounds really interesting though for amchur powder i think we could substitute that for tamarind (a little tamarind soaked in 1 cup of water). What do u think?Huh

rosslyn, I haven't made this recipe, but chana masala is a very flexible dish.  So if you don't want to use amchur powder, that's fine.  Tamarind would not really subsitute the same flavor, but it is a good (and common) addition to this dish, as is tomato paste (as someone mentioned above.

Lemon juice can be substituted for the amchur powder.  Amchur is made from green mangoes and is very sour.

I made this for dinner and really enjoyed it! I was surprised at how flavorful it was with so few ingredients. Thanks for this recipe!
