Caribbean Surprise

Ingredients (use vegan versions):

    1 15oz. can black beans, drained
    1 15oz. can tomatoes, drained
    1 cup frozen corn
    1.5 cups canned or fresh pineapple chunks (more or less)
    1/2 teaspoon ginger
    1 - 2 teaspoons (to your taste) curry powder

Directions:

Save some of the drained tomato or pineapple juice in case it gets too thick during heating.  Heat it all up in a saucepan and serve over rice or pasta.  You can also add chopped peppers, waterchestnuts, whatever.


This recipe tastes great and it is really easy to make! I made it for dinner last night and everyone -- including my father who hates everything -- loved it! Thank you for a great recipe.

This sounds terrific...can't wait to try it out tonight.  The addition of pineapple and curry should lend a fabulous new taste to black beans...instead of the normal salsas and cumin flavors.  Thanks

Hi, I tried this last night after I got my newsletter. It was GREAT Thanks for such a good receipe.  I like mushrooms so I added them to the receipe and I had it with Tagalla pasta (I can't spell the name of the pasta,obviously, but it was the wide noodles...not egg noddles). I had it for lunch the next day and it was fabulos!!!

I added 1/2 pound tofu to the mix and my wife and I loved it.  She ate it without the noodles, (watching her weight!)

This didn't taste good.  I had to force myself to eat it, just to feel like I wasn't wasting food.  I am frustrated by the fact that no one writes negative reviews here, leaving me to learn about bad recipes that hard way.  This is one recipe that deserves a bad comment.  Black beans and pineapple, what are you thinking?

YUM!  A great recipe for sure.I added some chopped green onion, chopped green pepper and a bit of Mango Orange juice that I had in the refrig!  Thanks for sharing this!

Lots of flavor packed into a dish that takes little effort and time.  My husband loves it as much as I do.  Made it for a holiday potluck luncheon at work--even the carnivores enjoyed as much as it was appreciated by the vegetarians.

Noam, I don't know why you thought you would like this recipe if you think black beans and pineapple don't go together.  That is a very, very common combination for Carribean food.  This receipt was very good and definately not the first time I've had black beans and pineapple together.  Obviously, you just don't like Caribbean flavor combinations.  So I wouldn't assume this recipe didn't get a bad review because people don't post them, because they do.  This recipe is just good.... if you like Caribbean food.

I made the recipe exactly as written for the vegweb potluck this past weekend.

Thoughts: I enjoyed the pineapple/black bean combo, and even though I don't like spicy, I would have doubled the amount of curry powder. It was a perfectly fine, tasty dish, good for when you get a hankering for pineapple, but it didn't wow anyone.

Alterations:  Because the pasta/rice amount wasn't suggested, I used half a box of bowtie pasta and that was a bit too much. I didn't add anything that the other folks on here suggested, but can see how cilantro/green peppers/scallions/peanuts, etc. would be quite tasty and appropriate.

I liked this one.  I really wanted to try the banana black beans that everyone is raving about, but sometimes bananas kill my stomach.  Anyway, I found this one and loved it. 

I resisted the urge to add some coconut milk.  Next time I think I will because that would make the sauce extra awesome.  I used a lot of the pineapple juice to make it nice and saucy plus some extra curry.  It was yum over rice.

I made this for dinner tonight and it was awesome! My omni hubby says it's a keeper too. Smiley

I made a couple minor adjustments. I used a can of pineapple tidbits and then added some garlic powder, sauteed onions, and a small can of tomato paste because we like things a bit thicker. Anyways, it was very tasty over rice and I'm looking forward to leftovers tomorrow.

Black beans and banana's are very good if you can get your tummy to agree with it. My ex is from Brasil and his mom used to cook black beans and rice all the time and his dad forced me to eat banana's with it one time (apple banana's actually - a hybrid banana - very interesting taste) and since then I always eat it that way
