Sweet & Sour Lentils

Ingredients (use vegan versions):

    2.5 Cups Water with Veg. Boullion Cubes
    1.0 Bay Leaf
    0.5 teaspoon Salt (optional)
    1.0 Cups Lentils
    1.0 Clove Garlic
    2.0 tablespoon Vinegar
    2.0 tablespoon Brown Sugar
    0.5 Cups Chopped Onions
    0.5 teaspoon basil or Oregano
    dash nutmeg

Directions:

Heat water with boullion to boiling.

Add washe'd lentils.  Lower heat and simmer 30 minutes.

Add remaining ingredients.  Simmer another 30 minutes.

Serve with rice.

Serves: 4

Preparation time: 1 hr


Made these for a potluck supper (a double batch). Only came home with enough for my lunch the next day! Everyone loved them. I did add some pineapple juice though; next time will likely add some pineapple chunks..why not? Reminds me of my moms sweet and sour spareribs when I was a kid (& meat eater). I always used to fish for the pineapple. I fried the onions in a bit of olive oil first and next time will also add some carrots cut diagonally and red or green bell pepper, then put it all into the lentils. Thanks for a great recipe!! :-)

I just finishe'd eating this with brown and wild rice.  Pretty good.  Instead of using plain vinegar I used cider vinegar and instead of brown sugar, I used molasses.  Maybe nextime I'll use pineaple juice and/or chunks like the others said.  Will do this recipe again.  Thanks!

Thank you so much for this recipe.  I made it for my dinner tonight, as I am the only vegetarian in my family.  I really enjoyed it because it had a great sweet/sour flavour, although the way I cooked it, it was a little more sweet than sour, but still delicious.  Thanks again.

Its good, but the current recipe with all the other additions above wasn't sour enough for me, so I added some lemon juice.  Mmmmmm. . .if you want to go from base ingredients, add some lemon rinds.  That works really well, also.

I made these tonight with sprouted lentils, pineapple, apple cider vinegar and red peppers (didn't have green). It is delicious!!! Highly recommended recipe - I know I'll use this again.

Very good recipe! Easy and tasty!
I subbed in cider vinegar and added in some chopped green pepper.  Will try with pineapple next time.

Wonderful!  Took it to a potluck at work and was very nervous, but many omnis praised it and two people asked for the recipe and suggested that I submit it for our company cookbook.

I added pineapple juice and tidbits, carrots, green pepper, and celery, but forgot the bay leaf.  When I mixed in the rice, the flavor wasn't as strong, so I mixed cider vinegar, brown sugar, and a little olive oil to make a dressing and added maybe 1/4 cup of that.  It made a huge difference.  These lentils rock my face off.

This is so delicious and easy to make. Five stars! I added a tin of pineapple chunks along with the juice and also some red bell pepper. I'll certainly make it again.

I gave this recipe 4 stars...It wasn't amazing or anything. I put in a can of pineapple along with the juice and a carrot. It needed a little something more though......

I followed the advice of some of the other posters and added a small can of pineapple and carrots to the mix.  Oohhhh boy, was it tasty!  I'm looking forward to the leftovers at lunch tomorrow.

I liked adding the onions directly to the lentils, rather than sauteeing them first- it kept them slightly crunchy.

This recipe is delicious. I added pineapple, carrot, and some frozen broccoli. To the seasonings I added soy sauce and ketcup. So good.

I used a  bottle of vegan barbecue sauce, and a can of pineapple chunks, and chopped carrots...a thicker sauce, but very, very good.

This was really good!  I added some crushed pineapple and green pepper like everybody else suggested.  The only thing wrong was that 2.5 cups seemed not to be enough liquid, so next time I'll just add a bit more.  Definitely recommended if you like sweet flavor for dinner!
