Super E-Z Franks and Beans

Ingredients (use vegan versions):

    2 cans of any bean, I like pinto or great northern
    1 pack tofu/veggie hot dogs (6-8 dogs)
    1/4 cup maple syrup or 4 tablespoon brown sugar
    1 tablespoon salt
    1 teaspoon garlic powder
    1+ tablespoon oil (for pot)

Directions:

Slice tofu dogs to bite size, brown lightly in oil over medium heat before adding beans (remove most of the water first). Stir in remaining sweets and spices and cover to cook about 5 min. You may also add sliced carrots, mushrooms, onion, or even potato - but then that wouldn't be super e-z would it?

Please use more/less salt or sweetness to your taste, enjoy!

Serves: 4

Preparation time: 5 min


I'd like to suggest putting a tbsp of vinegar in with the beans. Helps give it a bit more oomph and helps get the air out of the beans.

I liked this recipe a lot.  I used molasses instead of the maple syrup (iron!), and I used a LOT more garlic powder.  It was fast and quite yummy.  Thanks.

Tried this with navy beans, potates, carrots and scallions.  I used agave nectar instead of maple syrup and added lots of pepper. Terrific!  Grin

I didn't use any sugar or oil (because i cooked it in the microwave) amd i added 1 tbs. rice wine vinegar. This was a bit too salty for me, but my roomates loved it.

This is a recipe I lived on when I was younger and living in London. We used to add way less sweetener and add a small can of crushed tomatoes, and some vinegar. Delish!
