Butter Bean and Potato Curry

Ingredients (use vegan versions):

    4 medium sized potatoes
    1 can of tomatoes
    curry powder (medium)
    1 onion
    1 can butter beans
    a little oil

Directions:

Peel potatoes and cut into bite sized pieces put on to boil cook to taste,about 15 mins. Peel and slice the onion then fry lightly in a little oil adding 2tbsp of curry powder to the onion to fry with it for a few mins,then add the tinned tomatoes. Leave this to simmmer for approx 20 mins.

When the sauce is cooked add the potatoes and can of drained butter beans. Heat through and serve with rice or nan vegan bread.

Serves: 2

Preparation time: 30mins


there should be more recipes for butter beans, I love them! keep them coming

I've made the recipe as is and its delicious, and I've also added some seitan and raisins and its yummy that way too!!

I liked this curry to an extent-- but it seemed like it was missing a thing or two.  I am going to work on it because the idea is really great but my mouth wants more. I'm thinking about using more tomato, I did add a bunch of salt/pepper, and maybe it wants some okra, green pepper, or some other green veggie.  OH!  And it could really use some whole mustard seed.  Yes indeed.

After the curry sat in the refrigerator for three days, I ate leftovers and it was SO good.  I think next time I will make it a day in advance!

I used this as a base recipe and added cauliflower, spinach, and garam masala.  (I'm a firm believer in always adding a green veggie.)  It was delicious, but I'll use at least 2 cans of beans next time.

Once again I have to ask: How much is a can in America / Canada? I really like a lot of these recipes, but the measurements are only logic to people living in America / Canada, So please help!  Huh

Sisse, there are different sized cans in the US, but a standard sized can of beans is 16 oz.  I hope this helps.

This was delicious!  I made a few of the suggested modifications - I only used 2 potatoes and used 2 14.5-oz cans of tomatoes, and added a good amount of salt & pepper.  Served with warm pita and it was excellent.  A wonderful comfort meal.

I made this & it wasnt bad! BUT I am not sure I like the butterbeans so will try it with chickpeas next time. Does anyone know what spices can be used to replace curry powder? I cannot seem to find a curry powder I like.

This is especially good using chick peas.  Also, some chopped spinach or other leafy greens stirred in at the very end of cooking really completes it.  Oh yeah....a little cumin is always good here, too.
