Half-baked Tomatoes

Ingredients (use vegan versions):

    2 tomatoes
    1 clove garlic
    basil, oregano, other spices to taste
    1 tablespoon olive oil

Directions:

Simply halve the tomatoes, cut across the exposed side an x with a knife, spread garlic and other spices in the cuts and drizzle with olive oil, bake on 350 degrees for around 10 minutes.  Easy, fast and very tasty

Serves: 4

Preparation time: 12 minutes

This was good, but I had to cook it for a lot longer... probably 20-25 minutes until it softened up.

I followed this recipe but also added artichoke spinach hummus on top. And it was AMAZEING!!! Smitten

will it actually bake properly? Tomatoes have a high water content which is why it takes longer - but I'm just wondering whether the result is actually edible on it's own. Never heard of tomatoes just being used on their own, unless fried and smeared in batter?

Mmm, I used to make these a lot at home and just eat a whole big tomato for dinner Smiley So easy and delicious!
