Blueberry Scones

Ingredients (use vegan versions):

    1/2 cup granulated sugar
    3 tablespoon cold margarine
    Ener-G Egg Replacer (equivalent to one egg)
    1 cup all purpose flour
    1 1/2 teaspoon baking powder
    1/3 cup vegan sour cream (or vegan plain yogurt)
    1/2 cup fresh or frozen blueberries

Directions:

In a food processor, combine vegan sugar, margarine, egg replacer and vanilla; pulse on and off just until the mixture is crumbly. Add flour, baking powder and vegan sour cream; pulse on and off just until everything is combined.  Stir in the blueberries.

Drop the batter on baking sheet in 8-10 equal amounts.

Bake in centre of the oven for 12-15 minutes or until scones are golden.

Serves: 8-10 scones

Preparation time: 20 min at most


What temperature do you bake at?

This recipe is incomplete. You lack both the amount of vanilla and the baking temperature. i will try this with 1 Tsp of Vanilla and baked at 400 degrees in a preheated oven. I will post if this works out. If the poster reads this, please complete the recipe.

I baked these at 350 degrees for about 15 minutes and they seemed to turn out well.  My roommate ate all that I didn't eat, and there was a lot!  I did do some substitutions though, such as using graham flour instead of regular flour and vanilla yogurt instead of sour cream.  I imagine that one could use a lot of different fruit combinations for this dish, but I stuck with blueberries.

Yeah I used 1/2 tsp of vanilla extract and poured a teaspoon of lemon juice on the blueberries (which I doubled the amount of.) Really good!
