Easy Okra

Ingredients (use vegan versions):

    1 pound okra
    1 medium onion
    4-5 cloves garlic, peeled and chopped
    1 tablespoon ginger, peeled and chopped finely
    1 tablespoon lime juice
    salt
    jalapeno, optional
    3 tablespoon vegetable oil

Directions:

1. Cut the both ends off each okra, and then cut them in two halves longitudinally.  Mix them with lime juice in a bowl.

2.Cut peeled onion into two halves then each half into longitudinal slices.

3. Put the oil in a sauce pan , add chopped garlic & ginger and fry for one minute.  Then add onion.  Fry all these together till onion becomes very light brown (4-5 minute).

4.Stir in okra mixture.  Sprinkle salt to taste, and add chopped jalapeno (optional).

5. Cook for 8-10 minutes, but stir after every 1-2 minute till okra is tender.

6.Sprinkle freshly ground pepper on top.

Serve as side dish or with vegan bread.

Serves: 4

Preparation time: 15 mintues


This was VERY easy and VERY delicious... I have always looked for a nice way to prepare okra and have often been a little disappointed, but not this time. People at my dinner party thought it was very tasy, too!

Sounds good! Luv okra but it always seems there's limited fixin varieties.  *ROCK ON*!!!!!

Very simple but very good.  The Jalepeno is a must. If you're like me and have Okra in your garden, pick it small or it gets too tough to eat!

I used this recipe as a base and threw in some seitan and about 1/3 chopped fresh red pepper, sauteed it up with a splash of Bragg's and served it with rice.  It made a nice sort of lime-chili dish that I served with rice.  Even made good leftovers!

yum!!  i didnt use any salt, extra lemon juice and am eating it over white rice.  theres so much flavor in the okra, that it seeps into the white rice.  yummm.    I also didnt have any fresh ginger, so I threw in some powdered ginger right after i mixed the okra in with the onions.

This was seriously the most delicious thing ever. I added some chopped tomatoes but other than that left it as it. SO GOOD, I think the salt is important, I wouldn't skip it. YUM-E. Thanks!
