Potato Chips

Ingredients (use vegan versions):

    2-3 large potatoes
    vegetable oil
    salt (optional)
    any other herbs (optional)
    vinegar (optional)

Directions:

Preheat oven to 350 F. Slice potatoes 1/8 inch thick. Spread oil on to a baking sheet and lay out potato slices on it.  Brush potatoes with a little more oil and sprinkle with salt, herbs and/or vinegar.  Bake until they are just turning brown (check every 10 minutes or so). Cool before eating. Enjoy!

Preparation time: 30 min.


I've discovered that if you don't check them often enough(like every 5 minutes) they get burnt. Also, make sure that you slice them thinly and evenly.

Great recipe! I used garilc, thyme, rosemary, black pepper, salt, basalmic vinegar  and canola oil.

Lovely!

I found that sometimes they were soggy around the edges, so i recommend hand tossing the slices in salt, and then setting them in a strainer or on some paper towels for a few minutes.  This draws out the ecxess water and lets them brown more evenly.

Also, make sure you don't slice them too thin like i did... they get a bit dark that way.

Since discovering a few weeks ago that my favorite brand of salt and vinager chips are not, in fact, vegan (I've only been vegan for three weeks) I've been looking for an alternative. These chips are it.
I soaked mine in vinager for about two minutes before I put them on the plate- after they came out, the taste wasn't nearly as strong as the smell. On the other hand, I got both a great snack AND a clean microwave.
The chips were a little leathery around the edges, but not in a bad way. Much better then the super-thin ones at the grocery store.
I will make these again.

I've done this before, but I find that its way quicker (And a tad crispier) if you do it in the microwave.

Just take a plate, put the oil on it, lay down the potoato slices, add the spices, and microwave for about 4-5 minutes. (But keep an eye on it!)
