Low Fat Banana MuffinsIngredients (use vegan versions): 2 tablespoon white sugar
1 tablespoon egg alternate (Ener-G Egg Replacer recommended)
1 teaspoon vanilla essence
1/2 cup soy milk
2-3 ripe bananas mashed
1 and 1/2 cups wholemeal self raising flour
1/4 teaspoon baking soda
Directions:Beat all ingredients exept the flour and soda. When well beaten, sift the flour and soda into the mixture. Mix well, but don't overstir, as the less it is beaten the lighter the muffins will be. Place in prepared muffin trays and bake in a moderate oven (180) for 25-30 mins.
Serves: 13
Preparation time: 10 mins
These muffins are delicious.It is great knowing that they're low in fat and they taste great.I strongly recommend these yummy snacks!!!!!

Where can you get Ener-G Egg Replacers? I've looked all over the grocery store and in health food stores.

If you are not able to find an Ener-G Egg Replacer using a tablespoon of tofu does the trick. I did this in these muffins and they were scrumptious.

These came out really good (my pickiest eater had three in a row!). I added some cornmeal (about 1/4 cup). The one thing I would change is add a little salt. I think that would make them even better.

If you don't have egg replacer, you can use 1 teaspoon baking powder + 1/2 teaspoon baking soda + 2 Tablespoons flour + 3 Tablespoons water. To make self-rising flour out of all-purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to every cup of all-purpose flour.

Sorry, that's to replace one egg. To equal 1 T egg replacer, use 2 t baking powder, 1 t baking soda, and 4 T flour (double, omit water).

I used three bananas, no sugar, and about a tablespoon of molasses instead, plus a little cinnamon and nutmeg. Theyre not very sweet, but my boyfriend likes them like that with a little jam. I think when I make them again, I'll do it the same way with some coffee cake topping on half of them. By the way, I used the conversion for self-rising flour and I think it made it a little too salty. I would cut back a little on baking powder and/or salt. Still a little heavy but just delicious.

For an egg replacer, you can use Bobs Red Mill egg replacer--it is vegan and works well. I had a hard time finding the EnerG egg replacer (finally found it at a health food store)---but found the Bobs Red Mill one at a regular grocery store.
