Cucumber Salad

Ingredients (use vegan versions):

    2 cucumbers
    a little vegan sugar
    salt
    white vinegar

Directions:

Peel cucumbers. Grate them. Add some salt. Let it sit for ten minutes, drain the water. Add some vegan sugar and white vinegar. Put in refrigerator. Delicious.

Source: My mother from Holland.

Serves: 4-6

Preparation time: 10 min.


This is also very good will a little Dill added or herbed vinagar

My mother also made this! She sometimes added paper thin slices of white onion.

i too have fond memories of a similar cucumber salad that both my mother and my grandmother made.  instead of grating the cucumber it was sliced thin and sweet onions were also added. this gets better the longer it is refrigerated.

I also do a different version of this. Tomatoes are good in it, with seeds removed.

My Mother (from Germany) had gall bladder surgery and problems with the cuces.  She peeled and cut the cucumber in half, lenghtwise, then she used a teasponn and scraped all the seeds out, sliced the cuces thinly. She place all in a bowl and sprinkled some salt on top, mixed it and let it stand for about 20 minutes.  After that she drained the liquid the salt had drawn, added her vinegar, oil, salt, pepper, a pinch of vegan sugar and dill.  This way she had no problems eating the salad.  She also put cucumbers, sliced and treated in the potato salad.  Naturally this was potato salad with vinegar and oil.  I have found that it also reduces the burbing effect after I treat the cucumbers this way.  Maybe this helps some people.. This salad is great with slices of onion and tomatoes.  The longer the vinegar and sugar soaks in, the better! Smiley

Thank you. I was looking for this recipe because my mom always made this. She has passed away and this recipe was never written down. This is exactly what I was looking for. It must be a real Dutch way to prepare cucumber salad.

This is a staple in our rotation- howe'ver, I  made it substituting white vinegar for red and adding some dried oregano...yummy
