Easy Bruchette

Ingredients (use vegan versions):

    1/4 to 1/2 onion, finely diced
    1 large tomato, diced (may use canned diced tomatoes, drained, in a pinch)
    1 tablespoon dried basil (can use 3-4 fresh leaves)
    splash balsamic vinegar (little goes a long way)
    1 teaspoon olive oil (really need olive oil, not vegetable oil)
    French, Italian, or other crusty bread (vegan)
    1 clove garlic, minced (I do use the bottled variety, tastes just fine)
    nonstick cooking spray

Directions:

Slice the bread into about 6 nice and thick slices (slicing on the diagonal is nice) and place on a foil-lined (easy cleanup) cookie sheet. Spray the top side of the bread with Pam (makes it nice and crunchy). Broil for about 4 minutes--DONT leave unattended--burns very quickly--no need to turn bread over.

While toasting bread, combine all other ingredients in a medium sized bowl and set aside.

Remove bread from oven when golden brown. May rub exposed edge of a whole garlic clove, sliced in half, over bread for flavor if desired before you mince the garlic and add to bowl of tomato/onion mixture. Place bread on a platter and spoon tomato/onion mixture over pieces.

Very yummy and very easy. Enjoy!

Serves: 6

Preparation time: 15-20 min.


mmm... I love this, but instead of using Pam (? whatever it is) I drizzle a little extra-virgin olive oil over the bread, before I grill it.

i love bruschetta for lunch.. my mouth is so stinky from the raw garlic right now, but its so good  Evil

i used this yummy whole wheat sourdough bread i made a few days ago that was very similar in shape to a french baguette so it looked very pretty.. also i used fresh thai sweet basil cuz i really like the taste of it, but i used prolly close to 8 fresh leaves instead of 4 (i guess cuz they are smaller than italian basil).. like the previous comment i put olive oil on my bread instead of pam.. i just poured a little on my cutting board and pressed the bread slices in it to cover them evenly, cuz pouring oil directly on the bread never works out good for me.. i also spinkle a pinch of creole seasoning on the veggie mixture cuz it has salt and a variety of peppers in it, to really enhance all the flavors..

this is a perfect delicious bruschetta.. just what i wanted Smiley

This recipe was great, very tasty, and easy to make. I didn't have olive oil on hand so I used canola, and it turned out just fine. Smiley

This recipe was really easy to make. I wish that I had slightly fresher basil as mine has been in my apartment for a very long time. Haha I also used red AND white onion and it came out WAY too strong. Next time I'll put less onion or only stick to one kind.

Super yummy and quick to make - - two things I like a lot!  I made this for lunch and put it on whole grain bread and it was so good.  I could even see this as a base for a sandwich.
