Mango Banana Muffins

What you need: 

2 ripe bananas
3/4 cup sugar
1 ripe mango, chopped
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup vegetable oil
1 cup flour
about 1/8 cup mango nectar (you don't have to, but i did to make it even more mango-y)

What you do: 

1. Preheat oven to 350 degrees F. Grease muffin tin.
2. In a bowl, mash the bananas and mix in the sugar. Mix in mango. Mix in cinnamon, baking powder, and baking soda, then the oil followed by the flour. At this point you can taste the batter and if you think it needs more mango. Add the nectar now.
3. Spoon the mixture into the muffin tin. I usually get 6 muffins out of this recipe.
4. Bake for 35 minutes, or until a toothpick comes out clean when inserted into the middle of a muffin.
Source of recipe: I veganized a recipe i found online and also modified it because i didn't have some of the ingredients.

SO HOW'D IT GO?

These came out more cakey than muffin-like and were pretty dense, but were ooooooooh so tasty! I subbed apple juice for the mango nectar and I also baked these muffins for longer. I really love this recipe. Thank you so much!
