Finger-lickin' good cookies!Ingredients (use vegan versions): 1 banana
1 egg replacement (1 tbsp. ground flax + 2-3 tbsp water)
3/4 cup margarine and peanut butter (your choice as to ratio, ie. 1/2 cup margarine and 1/4 cup pb)
1/2 cup raw cane sugar
1/2 cup brown sugar
1 cup flour (can use 1/2 white flour and 1/2 whole wheat)
1 cup whole oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips (or mix of chocolate chips + raisins.... etc...anything really!)
Directions:1. Preheat oven to 350.
2. Grab a potato masher and start mashin' the banana, egg replacer, margarine, peanut butter, and sugars until nice and creamy.
3. Add dry ingredients (except chocolate chips/raisins) directly on top.
4. Start to mix, and then add chocolate chips/raisins, mix some more, but don't get too excited and overmix...
5. toss em' on an oiled pan and throw em' in the oven for 10 to 15 min.
6. Don't over-cook these cookies, they are ready when they start to show a little golden love around the base. They'll harden up on the pans after you take them out of the oven. Leave them on the pan on wire racks for a while. They'll cool a bit and be wonderfully delightfully awesome!!!
