scramble/hash morning madness!!Ingredients (use vegan versions): 1 small potato, washed, chopped
1/2 onion, chopped
3 gloves garlic, minced
1 stalk fresh chive, diced
1 carrot, grated or chopped
1/3 brick extra firm tofu, drained
black bean & corn salsa (or your favorite) or one small tomato
thyme
cumin
chili powder
pepper
salt
seasoning salt (optional)
garlic powder
lemon juice
oil for cooking
Directions:heat oil in skillet on med-high
cook garlic, onion, potato, & carrot until softened (i cook first with lid on to help cook quickly, then with lid off to caramelize onions and make potatoes cripsy)
once softened add mushrooms & chives (and tomato if using), and cook until mushrooms are softened then crumble in tofu to resemble scrambled eggs.
turn down heat to med-low
next add all of the spices to your liking, (sorry, i never really measure, i just taste test- A LOT)
i use one capful of lemon juice as well (but you can add more if you like)
mix everything in the pan to mix in the spices, you'll want the tofu to absorb the spices and lemon juice well.
if you didn't add tomato to the mix then plate up your crazy hash and top of with salsa.
this is also really good as a breakfast burrito
lots of veggies and protein...a good way to start your day!!
