Fruity Brussels SproutsIngredients (use vegan versions): 2 cups brussels sprouts
1/2 cup vegetable broth
3/4 cup currants
sea salt and fresh ground pepper to taste
1 tbsp extra virgin olive oil
Directions:I never measure this, you don't really need to it's very simple.
So cut your brussels in half, then rinse them off and then place them in a medium pan on top of the stove along with your olive oil, saute about 1-2 minutes until very lightly golden. Pour in enough broth to simmer gently on medium high for 3 minutes, add currants and cover, cooking about 2 more minutes until done. Season when done with salt and pepper.
You could use other fruit, I have used apricots, dried cherries, dried cranberries and raisins. This is very good on top of your favorite rice or couscous.
