Chick Pea MarsalaIngredients (use vegan versions): 2 cans chickpeas
1/8 teaspoon salt
1/2 teaspoom dried oregano
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1 tablespoon dried Marjoram (fresh is good too)
2 tablespoons green onion
1/2 cup Marsala wine
1/4 cup cooking sherry
optional (1/4 cup veggie broth)
Directions:Put the butter and olive oil in a skillet and add the chickpeas. After just a minute (you want the chick peas to just soak it up a bit first), add all but the Marsala wine and Sherry. (You don't have too but that is how I did it). Then just a minute and add the Marsala wine and Sherry. Simmer for 10 mins or less.I wait until the wine changes it's smell. You will see what I am talking about when you do it. First it's very strong and then at about 10 mins it smells sweet.
That's all! I like to serve over whole wheat penne.
