Low Fat Moist Bran Muffins

Ingredients (use vegan versions):

    1 1/4 cup Unbleached Wheat Flour
    3 teaspoons Baking Powder
    1/4 - 1/2 teaspoon salt
    1/4 cup plus 1 tablespoon applesauce
    1 "egg"
    1 cup Bran Flakes
    1 cup non-dairy Milk
    1/4 teaspoon cinnamon (Optional)

Directions:

Preheat your oven to 400 degrees F.

In a bowl mix 1 cup non-dairy milk, 1 cup of bran flakes, salt, cinnamon (optional) ,and applesauce. Let the mixture sit 5 minutes to soften up. Then mix up your "egg" and add that to the bowl along with 3 teaspoons baking powder and half your flour. Mix well, then add the other half of the flour and mix until there are no pockets of flour left.

Spread mixture evenly into large or regular sized muffin pan and bake muffins at 400 degrees for 20-25 minutes until golden brown and a toothpick inserted in the center comes out clean. Remove muffins from pan and let cool for a few minutes and enjoy!


**Tips**

I suggest using plain soymilk and Ener-g egg replacer for this recipe as that is what I used. Also muffins will puff up a lot, I used large sized muffin tin and they were pretty large so you could probably use regular sized 12 muffin tin and get twice as much. Also a dash of cinnamon gives great flavor to the muffins but is not required. You could probably use bran cereals but it would taste slightly different.
