Super Easy Delicious BeetsIngredients (use vegan versions): 6 beets
1/4 cup onion
3 tablespoons olive oil
2 tablespoons red wine vinegar
Salt, to taste
Directions:1) Wash and peel beets. Slice into rounds about 1/2" thick. Boil beets in lightly salted water until tender. This will take about 30 minutes, during which you can slice the onion into very thin strips and then go do something else.
2) Once beets are done, toss beets with onion, olive oil, vinegar and lightly salt to taste. That's it... buen provecho!
Source of recipe: I improvised this recipe based on a recent trip to Spain, during which I realized that anything could be made extra delicious by merely adding olive oil and vinegar.
Makes: Approximately one serving per beet, Preparation time: 20 minutes, Cooking time: 30 minutes
