Lil Bambino Sandwich

Ingredients (use vegan versions):

    2 slices of potato bread (or your favorite bread)
    4 slices tomato
    4 slices onion (in rings work great!)
    Mustard
    Pinch salt
    Vegan butter

Directions:

1) Butter one side of each slice of bread (for frying up like a toasted cheese sandwich). Put mustard on other side and top with tomato and onion. Fry up on medium heat until each side is golden brown dash a teeny amount of salt on toasted sandwich.

The mustard will give sandwich a creamy texture and taste, yum!

Serve with tomato soup and vegan chips!

Source of recipe: there's an Italian restaurant in town who does something similar, but not vegan...I thought it looked tasty on the menu, so I came home and made up my own vegan version! delish! SUPER EASY!

Makes: 1 sandwich, Preparation time: about 5 minutes, Cooking time: about 5 minutes

I made this last night, It was really good,  Thumbs Up....the mustard melts into the bread...yummy

Wow!  I made toasted cheese and tomato all the time. I Hadn't thought of the onion and mustard before.  Delicious.  I used red onion, in rings.  Thanks for the idea.  It does pair nicely with tomato soup and veggie chips.
