Rainbow Stir FryIngredients (use vegan versions): 1 bunch of kale (about a large handful of stems)
1 medium onion or 2 shallots, thinly sliced
1 clove garlic, minced
1 to 2 teaspoons crushed red pepper flakes, to taste
1/2 yellow bell pepper, cut into thin strips
1/2 red bell pepper, cut into thin strips
2 medium carrots, shredded or very thinly sliced
1/3 cup dry roasted slivered almonds
2 tablespoons sesame oil
Directions:1) Wash the kale and tear it into bite sized pieces, avoiding the tough stem.
2) Heat sesame oil in pan over med-high heat. Add garlic, red pepper flakes and onion and saute for 2 minutes. Add bell pepper to the pan and saute for 2 minutes. Add kale to the pan and saute for 4 minutes. Add carrots to the pan and saute for 2 minutes.
3) Top with almonds.
I serve with brown rice for a heartier meal.
