Veggie "Meatballs"

Ingredients (use vegan versions):

    1 cup breadcrumbs (make your own if you can)
    I cup walnuts
    3 or 4 carrots
    1 small onion
    4 cloves garlic
    3 celery stalks
    1/2 pound firm tofu
    1 cup vegan Parmesan cheese or vegan mozzarella
    1/2 cup olive oil
    1 teaspoon each salt and pepper
    1 teaspoon dried oregano
    1 teaspoon dried parsley
    1 tablespoon fennel seed

Directions:

1) First take the carrots, celery, garlic and small onion and chop finely in a food processor.  Take about a teaspoon of the olive oil and saute the this mixture until transparent, about 5 to 7minutes.  Once this is complete, put it in a large bowl. Next, take the walnuts and chop them finely in the food processor.  Put the chopped walnuts in the large bowl. Then put the tofu in the food processor and pulse a few times.  Then add all the other ingredients and mix well you may need more or less of the olive oil. You decide as long as they stick together as balls.  I make small "meatballs" with this recipe.

2) You can do one of two things now.  You can fry them in a pan then add to your favorite sauce or you can bake them in the oven.  You can double the recipe and freeze half of it once they are cooked.  It makes it easy to just take them out of the freezer and put them in your favorite sauce.  Good luck and enjoy these yummy meatless "meatballs."  Some of my biggest meat eater friends can not get enough of these meatless delights!
