Vegetarian Slow Cooker ChiliIngredients (use vegan versions): 1 cup brown rice
1 1/2 cups kidney and/or pink beans, pre-soaked (or from can)
1 - 14 ounce can diced tomatoes
1 - 14 ounce can diced green chiles
3/4 cup imitation bacon bits
2 small to medium onions or 1 large onion
4 cloves garlic
1 1/2 tablespoons ground cumin
1 tablespoon chili powder
1 tablespoon salt
1 teaspoon black pepper
Pinch of cayenne pepper (optional)
A few sprigs fresh cilantro (optional)
Water
Directions:1) Dice the onion finely. Mince the garlic. Put everything in the slow cooker.
My slow cooker holds 3.5 quarts -- I filled it to the top with water. If your slow cooker is bigger, adjust accordingly. Cook on low for 12 hours.
Note: I never measure my spices, so I'm guesstimating how much I put in. This chili came out really well, and my friends liked it too
