Spinach Dip Sandwich

Ingredients (use vegan versions):

    1 cup frozen spinach
    1 tablespoon hummus
    A few shakes of vegan Parmesan cheese
    2 slices sprouted grain bread
    Vegan margarine, as desired

Directions:

1) Cook spinach for 2 minutes in microwave.  Drain.  Mix in hummus and any spices you like.  Add in a few shakes of Parmesan style cheese. 

2) Toast sprouted grain bread and spread on a little margarine.  Scoop spinach mixture on toast and eat.

Source of recipe: I wrote this recipe for something easy to make to take to work that combines some of my favorite foods and got me away from eating premade veggie burgers.  This is a good "IBS" sandwich for those who are familiar with the disorder.  This sandwich is best made the night before so it sticks together nicely.  Enjoy! 

Makes: 1 serving, Preparation time: 5 minutes, Cooking time: 2 minutes

Yummm!  I'm eating this right now - it is soo good.  I used 2 cups fresh spinach, wilted down in the microwave for 2 minutes, homemade hummus and added a bit of vegan mayo and some mustard along with the parmesan.  Thanks for the recipe Smiley
