CJ's Ginger DoodlesIngredients (use vegan versions): 2 1/2 cups spelt flour
1/2 teaspoon baking soda
1 teaspoon aluminum free baking powder
1 teaspoon sea salt
1/2 teaspoon fresh ground cloves
3/4 cup organic turbinado sugar
1/4 cup olive oil
1/4 cup organic unsulphered molasses
2/4 cup rice milk
4 tablespoon freshly grated ginger
1/2 teaspoon ground ginger
Directions:1) In large bowl or mixer bowl start with dry ingredients, then add the olive oil, molasses, freshly ground ginger and rice milk. Stir in medium high speed until mixture balls up. Place in fridge for at least an hour.
2) Preheat oven to 350 degrees Farenheight.
3) The work comes here when your forming the cookies, all you do is make into a ball and flatten with the palms of your hands. You will have to clean your hands after rolling about 4 to 5 cookies but it's worth it. These bake for 10 minutes and will look soft but will become perfectly chewy on their own after sitting out for just a few minutes.
