Spicy noodles with chanterellesIngredients (use vegan versions): handful of large chanterelles
left over noodles
1 small onion
extra virgin olive oli
chopped walnuts
100% pure sesame seed oil
Chili oil
sea salt
1 cup non frozen peas
1 lime
pepper flakes
Directions:First slice your mushrooms lengthwise, keeping them a decent size.
Chop your onion... Saute mushrooms and onion in olive oil for 3 minutes adding a bit of sea salt. Next add your walnuts and saute about 1 minute more.
Add your noodles, chili oil, sesame seed oil and peas toss around and squeeze the juice out of 1 lime into the pan, toss around some more and cook until your noodles are crispy so about 3-4 more minutes.
Top with pepper flakes.
Source of recipe: Just a quick idea I came up with for lunch. This isn't too spicy really, also you don't have to use chanterelles you could use any mushrooms.
