simple old fashioned rhubarb pieIngredients (use vegan versions): 1 whole wheat pie crust, either homemade or store bought
7 to 10 stalks of rhubarb depending on size
1-1 1/2 cups of unrefined sugar
3 tbs. of corn starch or arrow root
1/2 of a lemon squeezed for juice
1 tbs. of margarine, i use earth balance
1 tbs. of agave nectar
Directions:First the pie crust. whole wheat works best with the flavor of the rhubarb.I buy my organic whole wheat crusts at Safeway in the freezer section, there really tasty. With a fork poke some holes in it and pop into the oven at 250 for about 10 min.
In a bowl add chopped up rhubarb any way you like, ( thinner will take less time to cook) and add sugar and cornstarch. Mix it around until it coated. Now squeeze the lemon over the mixture and mix it up again.
Take the rhubarb and pile it up in the pie crust, it will cook down. Try to spread it out evenly. Now cut margarine into pieces and place it evenly over the rhubarb. Now drizzle the nectar on top of that. Place into the oven at 350 for about 45 to 50 minutes. Half way through carefully mix the rhubarb so that all the pieces get a chance to sit in the sugary liquid. Once done let it sit for 20 minutes. I know its hard to wait but the juices will have time to set so its not so watery.
I never measure for this recipe which makes it really easy and fast.I hate strawberries in my rhubarb pie and just wanted an easy recipe that didn't call for anything fancy. That's how i slowly developed this recipe. Enjoy.
