Hummus in a Hurry

Ingredients (use vegan versions):

    1 - 14 ounce can garbanzo beans, drained
    2 tablespoons tahini
    2 cloves garlic
    2 tablespoons olive oil
    1 teaspoon mustard
    1 splash of club soda
    1/2 teaspoon salt
    Juice of 1 lemon
    1/4 teaspoon cayenne pepper
    optional: 1 handful of parsley or spinach for a green hummus!

Directions:

1) All ingredients into a food processor. Blend until smooth. Dump into a bowl...add a few drizzles of olive oil. Done. Easy!

Source of recipe: Experimenting in the kitchen.

Makes: One big bowl, Preparation time: 10 minutes, Cooking time: None

what does the club soda do? Make it airy and light? That's what I'm picturing...which could be awesome! It's so hard to get hummus light and fluffy.

Adding a little soy yogurt also gives the hummus a smooth, creamy texture.

Not bad! Easy, quick and very good. I remembered this recipe after discovering that I only had about two tablespoons of tahini left, and didn't want to make a trip to the store to make a hummus recipe that called for more tahini. I didn't have club soda, but added a few tablespoons of soy yogurt to give the hummus a smoother, creamier texture. (Got this tip I think from dedemed.com) I was surprised at how the mustard add a subtle zip to the taste.
