Blackbean and Salsa SaladIngredients (use vegan versions): Lettuce, as desired
1 - 14 ounce can black beans, rinsed
Fresh tomato salsa, as desired
Soy cheese, as desired
Balsamic vinegar, as desired
Olive oil, as desired
Salt and pepper, to taste
Red pepper flakes, to taste
Directions:1) Chop the lettuce, grate the cheese, open the beans.
2) Layer the salad in this order: lettuce, beans, salsa, and cheese. Drizzle with vinegar,oil, salt and pepper. Sprinkle on the red pepper flakes.
The limits to this salad in endless. Any salad dressing will do. This is just my reference.
Tip: I found the best way to drizzle olive oil on to a salad is use a small cereal spoon put a small amount on and drizzle I find I have better control over the oil and it doesn't end up in one corner of the salad. Yuck!
