Green Beans with Leeks and Smoked AlmondsIngredients (use vegan versions): 1 pound fresh green beans
1/2 teaspoon salt, divided
2 leeks
2 tablespoons olive oil
1/2 cup smoked almonds
black pepper
Directions:1) Wash and trim the green beans. Steam in a small amount of water and 1/4 teaspoon of salt until tender then drain.
2) Meanwhile, thinly slice the white and pale green parts of the leeks. Clean thoroughly. Heat the olive oil in a large skillet and saute the leeks until they're lightly browned. Season with the remaining 1/4 teaspoon salt.
3) Roughly chop the smoked almonds and add them to the fully cooked leeks. Toss the mixture with the steamed green beans and season with black pepper.
I loooooove this easy side dish because it reminds me of the smoky and fattening taste of green beans I grew up eating, which were prepared with bacon fat and onions...except not gross
