Sam's Simple Pizza Dough

Ingredients (use vegan versions):

    3 cups flour, sifted
    2 1/2 teaspoon active yeast
    1/2 teaspoon sugar
    1 teaspoon salt
1 1/2 cups VERY warm water
    1 tablespoon oil

Directions:

1) In a big bowl, add flour. Make a well in the middle of the flour. Add 1/2 cup of VERY warm water to your well and add the yeast, salt, and sugar, and stir just the well. Its okay if a little flour mixes in, but at this stage your just trying to "wake up" the yeast. Let the well alone for about five minutes, or until it gets nice and foamy.

2) Slowly stir in flour from the sides and add the rest of the VERY warm water and the oil. A wooden spoon is your best friend. You want the mixture to be as smooth and lumpless as possible and you shouldn't feel pressured mixing in the flour; just stir until you have a nice, slightly sticky dough.

3) Flour your hands and knead the dough for a good ten minutes. Cover the bowl with a towel and let it stand in a warm place for an hour or until it doubles in size.

4) Punch it down and knead it for another ten minutes. Let your dough rise again in a warm place for about an hour. Punch it down and role it out.

5) Add sauce and toppings and cook according to your favorite pizza recipes. Enjoy!
