Chanterelle ChiliIngredients (use vegan versions): 1 large handful chanterelle mushrooms , gently cleaned and chopped
olive oil, as needed
1 shallot, diced
1 cup vegetable broth (or water)
salt, to taste
cinnamon, to taste
cumin, to taste
1 - 14 ounce can beans
1 - 14 ounce can fire roasted tomatoes, diced style
1 to 2 vegan burger patties, crumbled
1 avocado, mashed
Directions:1. Place chanterelle mushrooms in a pan lightly coated with olive oil. Cook for 3 minutes to soften. Add shallots and finish cooking until lightly browned, about 7-8 minutes.
2. Add vegetable broth and spices. Bring to a simmer and then add beans, fire roasted tomatoes. Cook for 20 minutes to heat though and allow flavors to blend.
3. Stir in vegan burger patties. If you think there is too much liquid, you can add some flour to thicken the broth.
4. Place stew in a bowl. Top with kosher salt and avocado. Enjoy!
Source of recipe: Pretty easy chili if you ask me. I didn't think of the crumbled up garden burger till left overs the next day. Much better! Great served with homemade tortillas or flat bread.
