Prefab Chik'n Pasta Bake

Ingredients (use vegan versions):

    13 ounces pasta (I use whole wheat rotini)
    1 - 26 ounces jar pasta sauce
    8 ounces seitan
    10 ounces shredded vegan mozzarella
    Vegan Parmesan, as desired

Directions:

1) Preheat oven to 375 degrees Farenheight. Spread a thin layer of sauce on the bottom of an 11 x 8" glass baking dish or casserole dish, about 1/2 cup of sauce. 

2) Sprinkle uncooked pasta over sauce. Sprinkle a small amount of mozzarella on the pasta just so it's freckled, not covered.

3) Cut the seitan into 1" cube portions. Place the seitan evenly over the pasta and mozzarella. Pour the remaining sauce over the seitan making sure the pasta is thoroughly covered (uncovered pasta will not cook!).

4) Sprinkle the remaining mozzarella over the top. Cover with foil or dish lid and bake for 55 minutes. Then uncover and bake for an additional 5 minutes. Serve sprinkled with vegan Parmesan. Enjoy!

Source of recipe: I just sort of made this up one day because I thought it sounded delicious.  Four ingredients, super easy.

Makes:  6 servings, Preparation time: 15 minutes, Cooking time: 1 hour
