Simple Sweet and Sour VegetablesIngredients (use vegan versions): 1 cup long grain white rice
1 - 6 ounce can water chestnuts
2 medium carrots
1 head broccoli
SAUCE:
2/3 cup white vinegar
1/2 cup brown sugar
2 tablespoons ketchup or tomato paste
2 teaspoons soy sauce
1/4 cup cornstarch
1/4 cup water
Directions:1) Cook rice as directed. Cut up remaining vegetables and steam for 10 minutes.
2) In a small saucepan add vinegar, brown sugar, ketchup, and soy sauce. In a separate bowl mix the cornstarch and water until starch is dissolved. Bring sauce pan to a boil, then add the water and cornstarch to thicken. Should thicken immediately. Remove from heat and pour over rice and vegetables. Simple.
