Sham's Seriously Simple and Amazing Alfredo

Ingredients (use vegan versions):

    1/2 Cup vegan butter
    5 to 7 larges cloves garlic,minced
    1 small onion, minced
    1 to 2 tablespoons cornstarch
1 - 8 ounce tub vegan cream cheese
1 cup plain soymilk, plus extra as needed
    To taste:
    Basil
    Oregano
    Salt
    Pepper
    1 pound pasta, cooked
Vegan breaded chicken patties, baked and cut into chunks (optional)
    Steamed broccoli or cauliflower (optional)

Directions:

1) Melt butter in saucepan, add onions and garlic and cook until translucent. Add cornstarch and stir until thick. Add cream cheese and stir until melted. Add soymilk, stir until blended. Add spices, boil then set to simmer.

2) Add "chicken" and broccoli/cauliflower. Pour over your favorite pasta. I like bowties--it covers an entire box or package of pasta I've ever used.

You may need to add a little more soy milk if its thick. I usually end up adding 1/3 - 1/2 cup.

Note: The original recipe by Sham had 1/4 nutritional yeast to be added at the end. I  find that it tastes just as amazing without. But if you have some on hand, just add it before the veggies and chicken.

Additional Note: This recipe is dangerously delicious. Prone to defying space and time by disappearing within nanoseconds of its completion. It's even better the next day, if it lives to see it.

Source of recipe: This recipe is from Sham, a good friend.

Makes: 4 to 5 Servings, Preparation time: 5 minutes, Cooking time: 15 minutes
