Zucchini BreadIngredients (use vegan versions): 2 cups raw zucchini, grated
2 cups sugar
egg replacer for 3 eggs
1 cup vegetable oil
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons cinnamon
cooking spray
Directions:1) Preheat oven to 325 degrees Fahrenheit.
2) Mix the zucchini with the sugar, egg replacer, vegetable oil, and vanilla. Then add the rest of the ingredients and mix well.
3) Grease two 9"x5"x3" pans with cooking spray and put half of the mixture in each pan. Bake for approximately one hour or until a toothpick inserted in the bread comes out clean.
The bread freezes very well if you want to save some for later. It's delicious!
