Super Simple Spice CupcakesIngredients (use vegan versions): 1.5 Cups Organic All Purpose Flour
1/2 Cup Organic Sugar
1/2 Cup Brown Sugar
1.5 Tblsp Chai Spice Blend (I use McComick's)
1 tsp Baking Soda
1.5 tsp salt
1.5 tsp Cinnamon
1/2 Cup Water
1/2 Cup Vanilla Soy Milk + 1 Tblsp Vinegar
1.5 oz (Or Approx 3 Tblsp) Applesauce
1 tsp Vanilla
Directions:Preheat oven to 350. Put muffin liners in pan, or grease liberally with Organic Corn oil spray.
Pour 1/2 cup Vanilla soy milk, add 1 Tblsp Vinegar - Set aside.
Place all of the dry ingredients in a bowl (Flour, sugar, baking soda, salt, chai spice blend, cinnamon). Stir well. Add water, soy milk mixture, vanilla, and applesauce. Stir really well.
Dip finger into batter and lick. Determine if it needs more spices for your liking. If so, add them.
Once batter is to your liking, pour into muffin tin. Fill just about 2/3 (or a little more). Bake for 12-15 minutes (depending on oven).
While muffins are baking, lick your mixing spoon and bowl if you would like. The batter is delicious!!
Cool muffins on a wire rack.
We eat them plain, but that is only because we don't have any vegan frosting, and we aren't sure which homemade ones would taste well on these cupcakes. Normally, I would put a cream cheese frosting on them (YUM) but, we don't have any vegan cream cheese available where we live (and none in at least a few thousand miles).
