The Good Shepherd’s PieIngredients (use vegan versions): 1 bag of frozen cauliflower, this is for your mashed taters (or fresh, your call)
1 medium onion, chopped up (I like sweet onions)
1 bag of your frozen classic mixed veggies (peas, carrots, corn, green beans)
1 lb. of your favorite crumbled meat substitute (I was lazy and used Boca crumbles,)
(but I think a ground up Seitan O’ Greatness would be really good)
1 tbsp of Olive oil
1 cup of Tomato Juice
1 or 2 dashes of paprika, black pepper, garlic powder.

Use a nice size skillet and dump in chopped up onions with some olive oil and let them cook on medium heat, stir occasionally.
Throw your meat substitute in with onions and stir.
Add tomato juice to skillet and stir again. Let it simmer and cook down the liquid.
Add your veggies to the skillet and stir.
Work on your mashed cauliflower in between all of this.
If you don’t want to use cauliflower just make some mashed potatoes, use the instant if you want or fresh, whatever.
But I like mashed cauliflower.
So I steam it and then toss it into the food processor with some rice milk.
Blend until smooth and no lumps.
Put the meaty/veggie mixture into your casserole dish.
Level it out with a spatula.
Put your mashed cauliflower on top of the mixture and even it out like you’re icing a cake.
Bake in oven at 375 degrees F. for about 16-20 minutes.
Take it out and serve it up.
Yum style.
